- The case of salmon:
In 2018, the communities of Chaitén and Puerto Cárdenas came together in a historic effort to have the salmon farming cages removed from the lake. Thanks to this collective action, today we can enjoy a cleaner and freer Yelcho.
For this reason, we do not serve farmed salmon in our restaurant. However, salmon caught by our guests during the sport fishing season can be prepared by our kitchen team, turning it into a truly unique and personal experience.
- The case of trout:
The trout of Lake Yelcho are the true icons of the sport fishing that attracts visitors from all over the world. It is important to highlight that on our lake only catch-and-release fishing is allowed, which means that trout caught by our guests cannot be taken out of the water. Out of respect for this tradition and the ecosystem, trout therefore do not feature on our menu.
